Green Tea

Ever heard of Green Tea?  Green tea is harvested from a plant called camellia sinesis.  You can also make other varieties or tea like black, oolong and white from this plant.  The difference in the teas is due to their level of oxidation and this is achieved when the tea is being processed.  Black tea is the darkest variety of tea as it goes through the most oxidation.  Shortly after green tea is harvested it is steamed and this stop the oxidation process.  As well as being lighter in color, the higher level of antioxidants in green tea make the differences between the other varieties of tea available.
